Homemade Three Musketeers

4        cups chocolate chips, divided
1        8 ounce tub frozen whipped topping, thawed
2        tablespoons vegetable oil

Line an 8 or 9-inch square pan with wax paper. 

In a medium bowl, melt 2 cups of chocolate chips in the microwave at fifty percent power, or use a double boiler.  Using an electric mixer on high speed, beat melted chocolate for about 30 seconds.  Add whipped topping to melted chocolate and beat until well combined and fluffy, 30-60 seconds more. 

Spread chocolate mixture evenly into prepared pan (if mixture is too stiff, press into pan with lightly dampened hands).

Place in freezer for 30 minutes.  Remove pan from freezer and turn chocolate mixture onto a cutting board; cut into one-inch squares. 

Return squares to freezer for another 15-20 minutes. 

Meanwhile, melt additional 2 cups chocolate chips with 2 tablespoons of vegetable oil and stir until well combined.  Dip frozen chocolate squares into melted chocolate to coat.  Place on wax paper to put back in the fridge to set.  Keep chocolates in an airtight container in the refrigerator.

Monster Bash Part 1

For those of you who follow my personal blog, you probable already saw most of this Monster stuff... But I thought I would do a little blip on here and maybe so a little more detail into some of the crafts I did to get ready for the party.  It was my little Monsters 1st Birthday party this last weekend, and it was quite the Monster Bash!

It was a lot of work getting ready for it, I had fun doing it but I dont know if I will ever do anything like it again...
And for any of you that want to have a Monster Bash of your own, I will try to post links and blogs where I got some of my ideas!

First, the Monster Balls

I found this original idea at Sweet Craft Cakes.

I took 4inch Styrofoam balls and painted them with acrylic paint.
Cut felt into triangles (cut into strips and then zigzag into triangles), start at the bottom and work around in layers. Hot glue the triangles on and then then hard part, coming up with the cute faces!

Kids Crafts

While scrimmaging around through some of my favorite blogs i can across a new one that made me super excited! It actually made my heart pitter patter a little bit!

One of my favorite blogs to follow is UCreate, but did you know there was a UCreate with Kids...

It has the cutest crafts!  I cant wait to do some with my little monster!

Reindeer Feed

Ingredients
6 cups Rice Chex® or Chocolate Chex® cereal
1 bag (12 oz) white vanilla baking chips (2 cups)
1/3 cup coarsely crushed peppermint candy canes (14 miniature, unwrapped)

Reindeer Feed

Directions
1. Line cookie sheet with foil or waxed paper. Place cereal in large bowl.

2. In microwavable bowl, microwave white vanilla baking chips uncovered on High about 1 minute 30 seconds, stirring every 30 seconds, until chips can be stirred smooth. Stir in half the crushed peppermint candy.

3. Pour over cereal; toss to evenly coat. Spread mixture in single layer on cookie sheet. Immediately sprinkle with remaining candy. Let stand until set, about 20 minutes. Gently break up coated cereal. Store in airtight container.

Tip: To make feed bag, cut two 6 1/2 x 5-inch rectangles from a piece of muslin-type fabric. Using a hot glue gun, run a bead of glue on edge of three sides of one rectangle. Top with other rectangle to form pocket. Turn pocket inside-out. Roll down top opened edge to create a cuff.

CHILI'S CHICKEN ENCHILADA SOUP

Servings:

12

Ingredients:

• 1 tablespoon vegetable oil
• 1 lb chicken breast fillet (approx. 3 fillets)
• 1/2 cup diced onion
• 1 garlic clove, pressed, to taste
• 4 cups chicken broth
• 1 cup masa harina
• 3 cups water
• 1 cup enchilada sauce
• 16 ounces Velveeta cheese
• 1 teaspoon salt, to taste
• 1 teaspoon chili powder
• 1/2 teaspoon cumin

Garnish

• shredded cheddar cheese
• crumbled corn tortilla chips

Pico de Gallo

• 2 medium tomatoes, diced
• 1/2 cup diced Spanish onion
• 2 teaspoons chopped fresh jalapeno peppers, seeded and de-ribbed
• 2 teaspoons finely minced fresh cilantro
• 1 pinch salt

Directions:

Prep Time: 10 mins
Total Time: 1 1/4 hr

1. Add 1 tablespoon of oil to a large pot over medium heat.
2. Add chicken breasts to pot and brown for 4-5 minutes per side.
3. Set chicken aside.
4. Add onions and garlic to pot and sauté over medium heat for about 2 minutes, or until onions begin to become translucent.
5. Add chicken broth.
6. Combine masa harina with 2 cups of water in a medium bowl and whisk until blended.
7. Add masa mixture to pot with onions, garlic and broth.
8. Add remaining water, enchilada sauce, cheese and spices to pot and bring mixture to a boil.
9. Shred the chicken into small, bite-size pieces and add it to the pot.
10. Reduce heat and simmer soup for 30-40 minutes or until thick.
11. Serve soup in cups or bowls, and garnish with shredded cheddar cheese, crumbled corn tortilla chips, and pico de gallo.
